Teresa Wickland of Carroll began exploring an opportunity to open a restaurant and bar in Manning last fall, and says it is only after the considerable assistance she received from Main Street Manning President, Ron Reischl, and City Manager, Dawn Rohe, that her long-time dream will bring her back to her hometown of Manning as a business owner. Last Wednesday night, the Manning Economic Development Agency helped Wickland clear one of the last hurdles by approving her for a revolving loan. She said she is now waiting only on approval of liquor and food licenses to be set for a March opening of Brickhaus Brews at 301 Main Street in Manning. During all of the preparatory planning, Wickland said she had to move forward on the assumption that everything would get approved and work on solid business plans, menu development and selecting a name for the business. She said this turned out to be one of the toughest decisions to date. She enlisted the help of friends and family through a round of group texting before Wickland’s daughter, Randi, came up with Brickhaus Brews, a name that reflects the heritage and iconic elements of the Manning community. She said she is planning to begin conservatively and be open for dinners only at first on Wednesdays, Thursdays, Fridays and Saturdays. She will also be doing something a little different and opening earlier on Sundays for off-menu brunch items and a Bloody Mary bar. Wickland has been asked to consider lunches, but she would like to get things up and running and then listen to what her customers want. She said the menu will include homemade pizzas, sandwiches—introducing paninis, wraps and salads and she will keep the popular Mexican night every Thursday. She looking to schedule a variety of entertainment options to appeal to a wide range of customers. Wickland will be hiring between eight and 10 people on a part-time basis, and she said she realizes it could be her biggest challenge to find and keep good people who provide great, fast and friendly customer service. If everything continues to fall into place, Wickland is planning a soft opening in early to mid-March with an official opening to follow shortly thereafter.
